OUR STORY
Like most moms, I am always looking for ways to balance my daughters’ requests for treats with my desire to provide healthy and nutritious options. I figured out a way to include all the nutrients I wanted into a cookie with all the flavor and decadence they wanted. Each time you munch on an Indigo Rabbit cookie, you’re enjoying a goodie that is packed with phytonutrients from raw veggies and healthy ingredients you can pronounce.
Enjoy!
ABOUT OUR NAME
People ask me all the time, “What’s with the name ‘Indigo Rabbit’???” “Indigo” comes from the fact that both of my children have luminous blue eyes, and “Rabbit” is the name my uncle used to call me when I was a kid. Hence, “Indigo Rabbit”!
SANDY FOSTER, FOUNDER
Sandy Foster founded Indigo Rabbit in Northborough, Massachusetts. She, like all parents, wants the best for her kids and prays that something of nutritional value will pass their lips on a semi-regular basis. Her passion for baking, blended with an appetite for healthy living, has led to Indigo Rabbit.
“Who can put a whole rainbow of colors on her plate tonight?” This is the challenge Sandy poses to her two daughters each and every night. Huge gratification comes from seeing her kids enjoy tender spinach leaves, crispy carrots or earthy sweet potatoes. On those nights, however, when her girls insist on tummies full of crackers, at least Sandy knows they’ll benefit from dessert! Sandy devised clever ways early on for sneaking veggies into just about anything she could get away with. Now, the kiddos are used to their mom’s crazy tricks and love that they have inspired the veggie-hiding cookie company called Indigo Rabbit. Sandy has also strived to make sure that she offers a broad range of allergy-specific cookie types so that the growing number of people with various food allergies can enjoy Indigo Rabbit cookie munching as well.
Sandy Foster holds a Masters Degree in Clinical Mental Health Counseling. Prior to starting her family, she was in private practice, specializing in treating patients with Eating Disorders. She has an ardent interest in promoting healthy eating and teaching children and families to nourish their bodies and spirits. She has done a great deal of outreach on enhancing positive body image. She urges people, women especially, to turn away from the urge to measure their self-worth by the number on the scale.
GIVING BACK TO THE COMMUNITY
Indigo Rabbit is all about promoting healthy eating and giving families yummy, allergy-safe and nutrient-rich goodies. A critical element in making healthy food choices is figuring out what all the jargon on food labels really means. As founder of Indigo Rabbit, I love to head out into the community to talk to kids and their families about deciphering all the terminology. We learn how to decode the often puzzling messages we see on the packaging of foods we eat every day. We talk about making smart choices based on knowledge of our bodies and nutrition and not based on media messages and food manufacturer claims. I’m convinced that with a little work we can help a whole new generation of food shoppers direct the future course of food manufacturing and marketing and, ultimately, consumer health.
