Sandy Foster founded Indigo Rabbit in Northborough, Massachusetts. She, like all parents, wants the best for her kids and prays that something of nutritional value will pass their lips on a semi-regular basis. Her passion for baking, blended with an appetite for healthy living, has led to Indigo Rabbit.
“Who can put a whole rainbow of colors on her plate tonight?” This is the challenge Sandy poses to her two daughters each and every night. Huge gratification comes from seeing her kids enjoy tender spinach leaves, crispy carrots or earthy sweet potatoes. On those nights, however, when her girls insist on tummies full of crackers, at least Sandy knows they’ll benefit from dessert! Sandy devised clever ways early on for sneaking veggies into just about anything she could get away with. Now, the kiddos are used to their mom’s crazy tricks and love that they have inspired the veggie-hiding cookie company called Indigo Rabbit. Sandy has also strived to make sure that she offers a broad range of allergy-specific cookie types so that the growing number of people with various food allergies can enjoy Indigo Rabbit cookie munching as well.
